It's the final week of the holidays. Thank you to everybody who has been coming along to our new events - we decided at our committee meeting today to keep them running!

Join us in adapting our age-old Boardgames and Cake to a virtual setting in our Discord server, where we check in with each other and play games including Jackbox and Uno!

Unfortunately, we can’t bring and share cake, but we can make our own and post them on Slack.

This Week's Cake
 
 
 
 

Ingredients

  • 1 medium ripe banana
  • 1 tablespoon vegetable oil
  • 1 medium egg
  • 1 tablespoon semi-skimmed milk
  • 4 tablespoons light muscovado sugar
  • 4 tablespoons self-raising flour
  • Pinch of salt
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon pecans, roughly chopped (optional)
  • 1 tablespoon sultanas (optional)

To decorate (optional): - 2 tablespoons cream cheese - 1 tablespoon icing sugar - 1 teaspoon lemon juice - 1/4 teaspoon ground cinnamon

Method

  1. In a 350ml mug, mash 3/4 of the banana (saving the rest) with a fork and then beat in the oil, egg and milk until well combined.
  2. Add the sugar, flour, salt and cinnamon and beat again until smooth. If adding the pecans and/or sultanas, fold them into the mixture now.
  3. Cook in the microwave for 3 minutes 20 seconds @ 600W, 3 minutes @ 800W or 2 minutes 40 seconds @ 1000W. Leave to cool.
  4. Meanwhile, if making the frosting, place the cream cheese, icing sugar and lemon juice in a medium bowl and beat with a fork or whisk until light and fluffy. Spoon the frosting (if using) into a piping bag fitted with a closed star nozzle, and pipe at a 45° angle.
  5. Slice the remaining 1/4 banana. Top with slices of banana and a dusting of cinnamon if desired.
